Honey & Sesame Granola

Makes 3 LTR’s

Ingredients

  • 150g hazelnuts

  • 150g almonds

  • 140g pumpkin seeds

  • 140g sunflower seeds

  • 70g sesame seeds

  • 70g black sesame

  • 70g flaked coconut

  • 400g oats

  • 125g coconut oil

  • 250g honey

  • 9g fine salt

Method

Heat the oven to 155°C (fan) and line a large roasting tray with baking parchment.

Weigh the coconut oil, honey and fine salt straight into a saucepan. Warm gently until just melted, whisking to form a smooth, caramel-coloured mixture. Set aside.

Add all the dried ingredients to a large mixing bowl. Pour over the warm honey and oil mixture, stirring continuously to ensure everything is evenly coated.

Spread the granola onto the lined tray in an even layer. Bake for around 30 minutes, turning every 10 minutes, until evenly golden.

Hot tip: This works as a solid base — swap in different nuts, seeds or dried fruit depending on what you like.
